How to Make Calabacitas
"Calabacitas" means little squashes. It is a Mexican dish with zucchini, cheese and corn as it's main ingredients.Calabacitas are a healthy vegetarian side dish that is relatively easy to prepare.
Instructions
Things You'll Need:
- 1/4 cup oil
- 1 cup chopped onion
- 1 clove minced garlic
- 2 large tomatoes, chopped
- 4 large zucchini,halved lengthwise then cut into 1/4"slices
- 15oz can of whole kernal corn
- 1/2 cup cheddar cheese,grated
- salt
- pepper

Heat oil in a large skillet over medium heat. Once the oil is hot stir in onion and garlic. Stir onion and garlic until translucent, not brown, anywhere from 2-4 minutes.

Stir in tomatoes and turn the heat to medium high. Continue to stir the mixture fro about 5 minutes or until tomatoes start to soften.

Stir in the zucchini, corn and put salt and pepper to taste. Turn heat back to medium and cover skillet. Cook for about 10 minutes or until zucchini is tender. Add cheese, replace lid. Turn of the burner and leave cheese to melt. Serve immediately.

This recipe takes a total of 35 minutes to prepare and cook.
